For the Crust:
2 cups cooked chicken, shredded
1 can (15 oz) black beans, drained and rinsed
1 cup corn kernels (fresh, frozen, or canned)
1 cup diced bell peppers
1/2 cup diced onions
1 can (10 oz) diced tomatoes with green chilies
1 cup shredded cheddar cheese
1/2 cup sour cream
1 tbsp taco seasoning
1/2 tsp cumin
1/2 tsp garlic powder
1/4 tsp salt
1/4 tsp black pepper
1 cup crushed tortilla chips
Instructions
1. Prepare the Crust:
Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
In a large bowl, combine shredded chicken, black beans, corn, bell peppers, onions, diced tomatoes with green chilies, sour cream, taco seasoning, cumin, garlic powder, salt, and black pepper. Mix well.
Transfer the mixture to the prepared baking dish and spread evenly.
Sprinkle shredded cheddar cheese and crushed tortilla chips on top.
Bake for 25-30 minutes, or until the cheese is melted and bubbly.
