For the Crust:
- 1 lb ground beef
- 2 medium sweet potatoes, diced
- 1 bell pepper, diced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- Salt and pepper to taste
- 1/2 cup shredded cheese (optional)
- Fresh cilantro for garnish
Instructions
1. Prepare the Crust:
- Heat olive oil in a large skillet over medium heat. Add diced sweet potatoes and cook for 10 minutes, stirring occasionally.
- Add ground beef to the skillet and cook until browned, breaking it apart with a spoon.
- Stir in bell pepper, onion, garlic, chili powder, cumin, paprika, salt, and pepper. Cook for 5-7 minutes until vegetables are tender.
- If using, sprinkle shredded cheese over the top and cover for 2 minutes to melt.
- Garnish with fresh cilantro before serving.
