Sour Cream Beef Noodle Casserole

A creamy and comforting casserole featuring ground beef, egg noodles, tomato sauce, and a rich sour cream and cottage cheese layer, baked to perfection with cheddar cheese on top.

  • 1 lb ground beef
  • 1 small onion, chopped
  • 1 packet ranch dressing mix
  • 2 cups beef broth
  • 8 oz wide egg noodles
  • 1 cup tomato sauce
  • 1 cup sour cream
  • 1 cup small curd cottage cheese
  • 1 1/2 cups shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet or Instant Pot on sauté setting, brown ground beef with chopped onion and ranch dressing mix for about 5 minutes. Drain excess grease.
  3. Add beef broth to the skillet or pot and scrape the bottom to loosen any browned bits. Turn off heat.
  4. Add egg noodles evenly over the beef mixture, then pour tomato sauce evenly over the noodles.
  5. In a separate bowl, whisk together sour cream and cottage cheese.
  6. Transfer half of the noodle mixture into a 9×13 inch baking dish.
  7. Spread the sour cream and cottage cheese mixture evenly over the noodles.
  8. Add the remaining noodle mixture on top.
  9. Sprinkle shredded cheddar cheese over the top layer.
  10. Bake uncovered for 20-25 minutes until cheese is melted and bubbly.
  11. Remove from oven and let cool slightly before serving.

Notes

For a creamier texture, use full-fat sour cream and cottage cheese. You can substitute ricotta cheese for cottage cheese if preferred. This casserole pairs well with a fresh green salad or garlic bread.
