Slow Cooker Butterscotch Self Saucing Pudding

A rich and comforting dessert made in the slow cooker, featuring a butterscotch sauce that forms naturally under a soft pudding cake.

  • 1 egg
  • 1/2 cup milk (125 ml)
  • 2 tablespoons golden syrup (30 ml)
  • 3/4 cup brown sugar (150 grams)
  • 1 1/2 tablespoons all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup boiling water

Instructions

  1. Grease the inside of a 4-cup slow cooker with butter or non-stick spray.
  2. In a medium bowl, whisk together the egg, milk, and golden syrup.
  3. In another bowl, mix together the brown sugar, flour, baking powder, and salt.
  4. Add the dry ingredients to the wet ingredients and stir until just combined.
  5. Pour the batter into the slow cooker.
  6. Mix the boiling water with any remaining golden syrup and pour it over the batter (do not stir).
  7. Cover and cook on high for 2 to 2.5 hours, or until the pudding is set and the sauce has formed underneath.

Notes

For a richer flavor, use dark brown sugar. Serve warm with whipped cream or vanilla ice cream. The sauce forms naturally as the pudding cooks, so do not stir after adding the boiling water.
