Shrimp Scampi Pasta Bake

A creamy, garlicky shrimp scampi pasta bake with tender shrimp, al dente pasta, and a rich lemon-infused sauce topped with melted cheese.

  • 12 oz rigatoni or penne pasta
  • 1 lb shrimp, peeled and deveined
  • 4 tbsp butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 tsp red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook pasta according to package instructions until al dente. Drain and set aside.
  3. Season shrimp with salt, pepper, and red pepper flakes. In a large skillet, melt 2 tbsp butter and sauté shrimp for 2-3 minutes per side until pink and cooked through. Remove and set aside.
  4. In the same skillet, melt remaining butter. Add garlic and sauté for 1 minute until fragrant.
  5. Stir in heavy cream and chicken broth. Bring to a gentle simmer.
  6. Add cooked pasta to the skillet and toss to coat in the sauce. Season with salt and pepper to taste.
  7. Transfer pasta mixture to a greased baking dish. Arrange cooked shrimp on top.
  8. Sprinkle Parmesan and mozzarella cheese over the top.
  9. Bake for 15-20 minutes or until cheese is melted and bubbly.
  10. Garnish with chopped parsley and serve warm.

Notes

For extra flavor, add lemon zest or a squeeze of lemon juice before baking. Use fresh shrimp for best texture, or thaw frozen shrimp completely before cooking. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
