Mom’s World Famous Banana Bread

This classic banana bread recipe comes from my mom — the walnuts add a nice texture and flavor to the banana bread.

Ingredients

  • 3 or 4 ripe bananas, smashed
  • 1 egg
  • 3/4 cup sugar
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter, melted
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. In a large mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir the melted butter into the mashed bananas.
  4. Mix in the sugar, beaten egg, and vanilla extract.
  5. Sprinkle the baking soda and salt over the mixture and mix in.
  6. Add the flour last, stirring just until combined.
  7. Fold in the chopped walnuts if using.
  8. Pour the batter into a greased 9×5 inch loaf pan.
  9. Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
  10. Remove from oven and let cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.

Notes

Use very ripe bananas for the best flavor and sweetness. You can substitute walnuts with pecans or omit nuts entirely for a nut-free version.
