Authentic Seafood Paella

A traditional Spanish rice dish loaded with fresh seafood including shrimp, clams, and calamari, built with rich flavors and cooked to perfection.

  • 1/4 cup olive oil
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 4 cloves garlic, minced
  • 2 cups Arborio or paella rice
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon saffron threads
  • 1 can (14 oz) diced tomatoes
  • 4 cups seafood stock or chicken broth
  • 1/2 pound shrimp, peeled and deveined
  • 1/2 pound mussels, cleaned
  • 1/2 pound clams, cleaned
  • 1/2 pound calamari rings
  • 1/2 cup frozen peas
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish
  • Lemon wedges for serving

Instructions

  1. Heat olive oil in a large paella pan or wide skillet over medium heat.
  2. Add chopped onion and red bell pepper; sauté until softened, about 5 minutes.
  3. Stir in garlic, smoked paprika, and saffron; cook for 1 minute until fragrant.
  4. Add rice and stir to coat grains with oil and spices.
  5. Pour in diced tomatoes and seafood stock; bring to a boil.
  6. Reduce heat to medium-low and simmer uncovered for 15 minutes without stirring.
  7. Arrange shrimp, mussels, clams, and calamari over the rice; continue cooking until seafood is cooked and rice is tender, about 10-15 minutes.
  8. Sprinkle frozen peas over the top during the last 5 minutes of cooking.
  9. Remove from heat and cover with a clean kitchen towel; let rest for 5 minutes.
  10. Garnish with chopped parsley and serve with lemon wedges.

Notes

Use fresh seafood for best flavor and avoid stirring the rice during cooking to develop the traditional crust called ‘socarrat’. Adjust saffron quantity based on availability and preference.
