Sausage and Peppers

A simple one-dish recipe where Italian sausages are baked on top of marinated bell peppers and onions, resulting in tender vegetables and fully cooked sausage with a flavorful finish of fresh basil.

Ingredients

  • 3 Tbsp. extra-virgin olive oil
  • 1 Tbsp. red wine vinegar
  • 2 cloves garlic, minced
  • 2 tsp. dried oregano
  • 1 tsp. crushed red pepper
  • 3 bell peppers, sliced
  • 1 large yellow onion, sliced
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 6 sweet or hot Italian sausages, sliced into quarters
  • 1/4 cup freshly sliced basil

Instructions

  1. Preheat oven to 400°F.
  2. In a bowl, combine olive oil, red wine vinegar, minced garlic, dried oregano, and crushed red pepper.
  3. Add sliced bell peppers and onion to the bowl and toss to coat all pieces evenly with the mixture.
  4. Pour the coated vegetables into a baking pan.
  5. Place the sausage pieces on top of the vegetables in the pan.
  6. Bake until the vegetables are tender and the sausage is fully cooked through, about 25-30 minutes.
  7. Remove from oven and sprinkle freshly sliced basil over the top before serving.

Notes

This dish can be served on its own or with pasta and marinara sauce. Leftovers keep well refrigerated for up to 4 days or frozen for up to 3 months.
