Same-Day Pizza Dough

A fool-proof same-day pizza dough recipe that produces a perfectly chewy and airy pizza crust suitable for all cooking methods, ready to use in just a few hours.

  • 300 g (about 2 1/3 cups) '00' flour
  • 300 g (about 2 1/3 cups) all-purpose flour
  • 1 teaspoon (3 g) active dry yeast
  • 12 g fine sea salt
  • 350 g (about 1 1/2 cups) warm water (no warmer than 100°F)
  • 2 tablespoons olive oil

Instructions

  1. In the bowl of a stand mixer fitted with the dough hook, whisk together the flour, yeast, and salt. Pour in the water and olive oil and mix on medium-low for 10 minutes until the dough is smooth.
  2. Transfer the dough to a greased bowl, cover with plastic wrap, and let it rise for 2 hours or until doubled in size.
  3. Turn the dough out onto a clean work surface; it should be tacky but not sticky. Lightly dust with flour if sticky. Divide into 4 equal portions and shape into smooth, tight balls.
  4. Transfer the dough balls to a greased pizza dough box, cover, and refrigerate for at least 2 hours or up to 72 hours.
  5. Bring the dough to room temperature for 30 minutes to 1 hour before shaping.
  6. On a well-floured surface, stretch the dough into an 11-12 inch circle, add toppings, and bake as desired.

Notes

This dough is versatile and works well with various cooking methods. Adjust flour amount slightly if dough feels too sticky. For best texture, allow dough to rest in the refrigerator for at least a couple of hours after initial rise.
