Same-Day Pizza Dough

A perfectly chewy and airy pizza crust, compatible with all different cooking methods and ready the same day—great for home or pizza ovens.

Ingredients

  • 300 g '00' flour (about 2 1/3 cups)
  • 300 g all-purpose flour (about 2 1/3 cups)
  • 1 teaspoon (3 g) active dry yeast
  • 12 g fine sea salt
  • 350 g warm water (about 1 1/2 cups), no warmer than 100°F
  • 2 tablespoons olive oil

Instructions

  1. In the bowl of a stand mixer (or by hand), whisk together the flours, yeast, and salt. Pour in the water and olive oil and mix on medium-low for about 10 minutes until the dough is smooth.
  2. Transfer dough to a greased bowl, cover with plastic wrap, and let rise for 2 hours or until doubled.
  3. Divide dough into 4 equal portions, shape into smooth tight balls, place in a greased pizza dough box, cover, and refrigerate for at least 2 hours (up to 72 hours).
  4. Bring dough to room temperature (30–60 minutes), then stretch into 11–12" circles, top as desired, and bake at your oven’s hottest temperature until golden and bubbly.

Notes

Dough should be tacky but not sticky—lightly dust with flour if needed during shaping. For crispier crust, use a pizza stone or baking steel and preheat your oven thoroughly. This dough can also be frozen for future use.
