Ingredients

- 2 lbs ripe tomatoes, halved
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 1/4 cup fresh basil leaves
- 4 cups vegetable broth
- 1/2 cup heavy cream
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F. Place tomatoes, onion, and garlic on a baking sheet, drizzle with olive oil, and roast for 25 minutes.
- Transfer roasted vegetables to a pot. Add vegetable broth and basil, then simmer for 10 minutes.
- Blend the soup until smooth, stir in heavy cream, and season with salt and pepper.
