Roasted Garlic, Chicken & Herb White Pizza

A great white chicken pizza with a creamy roasted garlic white sauce topped with cooked chicken, red onions, and herbs that rivals any pizza out there.

  • 1 tablespoon butter
  • 8 cloves roasted garlic
  • 2 tablespoons all-purpose flour
  • 1 ½ cups milk
  • ½ cup half and half
  • ½ cup grated Parmesan cheese
  • 1 pound pizza dough
  • 1 ½ cups cooked boneless skinless chicken breast, chopped
  • ¼ cup red onion, chopped
  • ¾ cup shredded Mozzarella cheese
  • 1 teaspoon fresh thyme
  • ½ teaspoon dried oregano
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 450°F and prepare a baking sheet with a Silpat liner or grease and sprinkle with cornmeal.
  2. Melt butter in a small saucepan and sauté minced roasted garlic for about 1 minute.
  3. Add flour and stir until well blended; cook for 1 minute until light golden brown.
  4. Whisk in milk and half and half until smooth; season with pepper and let sauce simmer until slightly thickened.
  5. Mix in Parmesan cheese and remove from heat.
  6. Spread pizza dough into a roughly 12-inch circle on the prepared baking sheet.
  7. Spread the white sauce evenly over the dough.
  8. Top with chopped chicken, red onions, and shredded mozzarella cheese.
  9. Bake for 12-15 minutes or until the crust is golden and cheese is melted and bubbly.
  10. Remove from oven, sprinkle with fresh thyme, oregano, and parsley before slicing and serving.

Notes

Use freshly roasted garlic for best flavor. For a crispier crust, prebake the pizza dough for 5 minutes before adding sauce and toppings. Fresh herbs added after baking enhance the aroma and taste.
