Easy Sweet and Savory Baked Delicata Squash

A colorful and delicious roasted delicata squash that is sweet and savory, perfect as a side dish for Thanksgiving or any meal.

  • 4 cups delicata squash, cleaned and cut (about 2 medium sized squash)
  • 1 tablespoon brown sugar
  • Salt, to taste
  • Pepper, to taste
  • Cayenne pepper, to taste
  • 1 tablespoon extra virgin olive oil

Instructions

  1. Preheat oven to 425 degrees F. Line a baking sheet with silpat or parchment paper to prevent sticking.
  2. In a large bowl, combine the delicata squash pieces with brown sugar, salt, pepper, cayenne pepper, and olive oil.
  3. Arrange the squash pieces cut side down on the prepared baking sheet without overcrowding.
  4. Roast in the oven for 20 to 25 minutes, turning the squash to the other cut side halfway through roasting.
  5. Squash is done when the flesh is soft but still holds together.

Notes

This recipe is simple yet flavorful with a balance of sweet and savory. For a twist, try seasoning with Tony Chachere’s or your favorite spice blend. The skin of delicata squash is edible, so no peeling is necessary.
