A classic, creamy pistachio-flavored salad with marshmallows and pineapple, perfect for potlucks and holiday gatherings.

For the Crust:

  • 1 (3.4 oz) package instant pistachio pudding mix
  • 1 (20 oz) can crushed pineapple, undrained
  • 1 1/2 cups miniature marshmallows
  • 1/2 cup chopped pecans
  • 1 1/2 cups whipped topping (like Cool Whip)

Instructions

1. Prepare the Crust:

  1. In a large bowl, whisk together the pistachio pudding mix and crushed pineapple (with juice) until well combined.
  2. Fold in the miniature marshmallows and chopped pecans until evenly distributed.
  3. Gently stir in the whipped topping until the mixture is smooth and fully incorporated.
  4. Cover and refrigerate for at least 2 hours before serving to allow flavors to meld.
