Raw Papaya Fry

A quick and easy Indian-style stir-fry of raw papaya with spices, coated lightly with chickpea flour for a crispy texture and flavored with curry leaves and whole chilies.

  • 1 medium-sized raw papaya, peeled and thinly sliced
  • 1 tablespoon besan (chickpea flour)
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon salt, or to taste
  • 1 tablespoon oil
  • 12 whole dried red chilies
  • A few curry leaves
  • Water as needed

Instructions

  1. Peel the raw papaya and cut into thin slices.
  2. Wash the sliced papaya thoroughly and drain excess water.
  3. Boil the papaya slices in water for about 5 minutes until slightly tender and drain the water.
  4. In a bowl, mix besan, chili powder, turmeric powder, and salt.
  5. Add a little water to the besan mixture to make a thin coating paste.
  6. Coat the boiled papaya slices evenly with the besan mixture.
  7. Heat oil in a pan over medium heat.
  8. Add whole dried red chilies and curry leaves to the hot oil and sauté briefly until aromatic.
  9. Add the coated papaya slices to the pan.
  10. Fry the papaya pieces, stirring occasionally, until golden brown and crisp on all sides (about 8-10 minutes).
  11. Remove from heat and transfer to a serving plate.

Notes

Ensure the papaya is sliced thin and coated well with the chickpea flour mixture for best crispiness. You can adjust the chili powder to taste for spiciness. Serve hot as a side dish with rice or rotis.
