  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs

  • 1/2 cup sour cream
  • 1/4 cup heavy cream
  • 1 cup fresh or frozen raspberries
  • 1/4 cup granulated sugar (for raspberry sauce)
  • 1 tablespoon lemon juice

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Combine graham cracker crumbs and melted butter; press firmly into the bottom of a 9-inch springform pan to form the crust.
  3. In a large bowl, beat cream cheese and sugar until smooth and creamy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in melted white chocolate, vanilla extract, sour cream, and heavy cream until fully incorporated.
  6. Pour half of the cheesecake batter over the crust.
  7. In a small saucepan, combine raspberries, sugar, and lemon juice; cook over medium heat until raspberries break down and sauce thickens, about 5 minutes. Strain to remove seeds if desired.
  8. Drop spoonfuls of raspberry sauce over the cheesecake batter in the pan, then pour the remaining batter on top.
  9. Use a knife or skewer to swirl the raspberry sauce into the batter gently.
  10. Bake for 50-60 minutes or until the center is almost set but still slightly jiggly.
  11. Turn off the oven and leave the cheesecake inside with the door slightly open for 1 hour.
  12. Remove from oven and cool completely at room temperature, then refrigerate for at least 4 hours or overnight before serving.
