Description

Moist and flavorful pumpkin muffins topped with a sweet, crunchy streusel topping, perfect for autumn mornings or holiday gatherings.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 2 large eggs
  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 1/3 cup water
  • For the streusel: 1/4 cup flour, 1/4 cup brown sugar, 1/2 teaspoon cinnamon, 2 tablespoons cold butter

Instructions

  1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking soda, salt, and pumpkin pie spice.
  3. In another bowl, beat eggs, then mix in pumpkin puree, oil, and water. Combine wet and dry ingredients until just mixed.
  4. For streusel: mix flour, brown sugar, and cinnamon. Cut in cold butter until crumbly.
  5. Fill muffin cups 2/3 full, sprinkle generously with streusel, and bake for 20-25 minutes or until a toothpick comes out clean.
