A delicious and nutritious make-ahead breakfast that tastes like pumpkin pie in a jar.
Ingredients

- 1/2 cup rolled oats
- 1/2 cup milk of choice
- 1/4 cup pumpkin puree
- 1 tablespoon maple syrup
- 1/2 teaspoon pumpkin pie spice
- 1/4 teaspoon vanilla extract
- Pinch of salt
- 2 tablespoons Greek yogurt (optional)
- 1 tablespoon chopped pecans for topping
Instructions
- In a jar or container, combine oats, milk, pumpkin puree, maple syrup, pumpkin pie spice, vanilla extract, and salt.
- Stir well until all ingredients are fully combined and no lumps remain.
- Seal the container and refrigerate for at least 4 hours or overnight.
- Before serving, stir in Greek yogurt if using and top with chopped pecans.
