Pumpkin Pie Overnight Oats

Description

A delicious and nutritious make-ahead breakfast that tastes like pumpkin pie in a jar.


Ingredients

Scale
  • 1/2 cup rolled oats
  • 1/2 cup milk of choice
  • 1/4 cup pumpkin puree
  • 1 tablespoon maple syrup
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon vanilla extract
  • Pinch of salt
  • 2 tablespoons Greek yogurt (optional)
  • 1 tablespoon chopped pecans for topping

Instructions

  1. In a jar or container, combine oats, milk, pumpkin puree, maple syrup, pumpkin pie spice, vanilla extract, and salt.
  2. Stir well until all ingredients are fully combined and no lumps remain.
  3. Seal the container and refrigerate for at least 4 hours or overnight.
  4. Before serving, stir in Greek yogurt if using and top with chopped pecans.
