Pumpkin Bisque

A creamy, comforting pumpkin bisque perfect for fall, with a hint of spice and a smooth texture.

  • 2 tablespoons unsalted butter
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (15-ounce) can pumpkin puree
  • 3 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground allspice
  • Salt and pepper, to taste
  • 1 tablespoon maple syrup (optional)
  • Fresh parsley or chives, for garnish

Instructions

  1. Melt butter in a large pot over medium heat. Add onion and garlic; sauté until softened, about 5 minutes.
  2. Stir in pumpkin puree, broth, cream, cinnamon, nutmeg, ginger, allspice, salt, pepper, and maple syrup (if using). Bring to a simmer.
  3. Reduce heat to low and cook for 15–20 minutes, stirring occasionally, until flavors meld.
  4. Use an immersion blender to puree the soup until smooth (or transfer in batches to a blender).
  5. Taste and adjust seasoning. Serve hot, garnished with fresh parsley or chives.

Notes

For a vegetarian version, use vegetable broth. The bisque can be made ahead and reheated gently. Adjust spices to taste for a more or less pronounced flavor.
