For the Crust:
- 4 bone-in pork chops
- 1 tsp salt
- 1 tsp black pepper
- 1 tbsp olive oil
- 1 cup sliced mushrooms
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1 tsp dried thyme
Instructions
1. Prepare the Crust:
- Season pork chops with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat. Sear pork chops for 4-5 minutes per side until golden brown. Remove and set aside.
- In the same skillet, add mushrooms, onion, and garlic. Cook until softened, about 5 minutes.
- Pour in chicken broth and scrape up any browned bits from the bottom of the pan. Stir in heavy cream and thyme.
- Return pork chops to the skillet, spooning sauce over them. Simmer for 10-12 minutes until pork is cooked through and sauce thickens.
