A delightful twist on the classic tiramisu, featuring layers of coffee-soaked ladyfingers and creamy pistachio mascarpone filling.

For the Crust:
- 1 1/2 cups heavy cream
- 8 oz mascarpone cheese
- 1/2 cup powdered sugar
- 1/2 cup pistachio paste
- 1 tsp vanilla extract
- 24 ladyfingers
- 1 cup strong brewed coffee, cooled
- 1/4 cup crushed pistachios for garnish
Instructions
1. Prepare the Crust:
- In a large bowl, whip the heavy cream until stiff peaks form.
- In another bowl, mix mascarpone, powdered sugar, pistachio paste, and vanilla until smooth.
- Gently fold the whipped cream into the mascarpone mixture until well combined.
- Quickly dip each ladyfinger into the coffee and layer them in the bottom of a 9×9 inch dish.
- Spread half of the pistachio mascarpone mixture over the ladyfingers.
- Repeat with another layer of coffee-dipped ladyfingers and the remaining mascarpone mixture.
- Cover and refrigerate for at least 4 hours or overnight.
- Before serving, sprinkle with crushed pistachios.
