For the Crust:

  • 1 1/2 cups crushed graham crackers
  • 1/3 cup melted butter
  • 1/4 cup granulated sugar
  • 1 package (3.4 oz) instant pistachio pudding mix
  • 1 1/2 cups cold milk
  • 1 cup whipped topping
  • 1/2 cup chopped pistachios
  • 1/2 teaspoon vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs, melted butter, and sugar in a bowl.
  2. Press the mixture into a 9-inch pie dish to form the crust. Bake for 8 minutes, then let cool.
  3. In a separate bowl, whisk pistachio pudding mix with cold milk until thickened.
  4. Fold in whipped topping, chopped pistachios, and vanilla extract until well combined.
  5. Pour the filling into the cooled crust and smooth the top. Refrigerate for at least 4 hours before serving.
