For the Crust:
- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1 can (14.5 oz) diced tomatoes
- 1 cup cooked rice
- 1 cup shredded cheddar cheese
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C).
- In a large skillet, brown the ground beef with onion and garlic over medium heat. Drain excess fat.
- Add diced bell peppers and cook for 3-4 minutes until slightly softened.
- Stir in diced tomatoes, cooked rice, Italian seasoning, salt, and pepper. Mix well.
- Transfer mixture to a greased 9×13 inch baking dish. Top with shredded cheese.
- Bake for 20-25 minutes until cheese is melted and bubbly.
