For the Crust:

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup pineapple juice
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup crushed pineapple, drained

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, whisk together flour, sugar, baking soda, and salt.
  3. In another bowl, beat eggs, then mix in pineapple juice, oil, and vanilla.
  4. Combine wet and dry ingredients, stirring until smooth. Fold in crushed pineapple.
  5. Pour batter into prepared pan. Bake for 30-35 minutes or until a toothpick comes out clean.
