For the Crust:
- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup pineapple juice
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 cup crushed pineapple, drained
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, whisk together flour, sugar, baking soda, and salt.
- In another bowl, beat eggs, then mix in pineapple juice, oil, and vanilla.
- Combine wet and dry ingredients, stirring until smooth. Fold in crushed pineapple.
- Pour batter into prepared pan. Bake for 30-35 minutes or until a toothpick comes out clean.
