For the Crust:
- 2 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 cup pineapple jam or preserves
- 1/4 tsp salt
- 1 tsp baking powder
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, cream together butter and sugar until fluffy. Beat in egg and vanilla.
- Whisk flour, salt, and baking powder in another bowl, then gradually mix into wet ingredients to form a dough.
- Roll dough into 1-inch balls, flatten slightly, and place on baking sheet. Make a small indentation in the center of each cookie.
- Fill each indentation with about 1/2 tsp pineapple jam.
- Bake for 12-15 minutes until edges are lightly golden. Cool on a wire rack before serving.
