Pina Colada Fluff

A creamy, fluffy dessert salad combining pineapple, coconut, marshmallows, and a hint of rum or coconut extract for a flavor reminiscent of the classic piña colada drink. This no-bake treat is easy to make and perfect for parties or summer gatherings.

Ingredients

  • 4 ounces cream cheese, softened
  • 1/4 cup sugar
  • 1 teaspoon coconut extract
  • 1 20-ounce can crushed pineapple, undrained
  • 1 3/4-ounce package instant coconut cream pudding mix
  • 1/2 cup sweetened flaked coconut
  • 1 8-ounce container Cool Whip, thawed
  • 1 20-ounce can pineapple tidbits, well-drained
  • 2 1/2 cups miniature marshmallows
  • 1/2 cup maraschino cherries, drained and halved

Instructions

  1. Beat cream cheese, coconut extract, and sugar until fluffy.
  2. In a large bowl, combine crushed pineapple (with juice), coconut cream pudding mix, and flaked coconut; mix until combined.
  3. Fold in the Cool Whip.
  4. Stir in the cream cheese mixture into the pudding mixture.
  5. Fold in the well-drained pineapple tidbits and miniature marshmallows.
  6. Finally, gently fold in the halved maraschino cherries (pat cherries dry to avoid streaking).
  7. Chill until ready to serve.

Notes

After halving the cherries, place them on a paper towel to remove excess juice to prevent the salad from looking streaky. Use coconut extract for authentic flavor; rum extract can be substituted but adds some alcohol presence. This dish keeps well chilled and is best served cold.
