For the Crust:
- 1 box yellow cake mix
- 1 cup crushed pineapple, undrained
- 1/2 cup coconut milk
- 1/2 cup vegetable oil
- 3 large eggs
- 1 cup shredded coconut
- 1/2 cup white rum (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, combine cake mix, pineapple, coconut milk, oil, eggs, and rum (if using). Mix until smooth.
- Fold in shredded coconut. Pour batter into prepared pan and bake for 30-35 minutes or until a toothpick inserted comes out clean.
- Allow to cool completely before serving.
