Perfectly Tender Chocolate Cake

A moist and tender chocolate cake that’s perfect for any occasion, with a rich chocolate flavor and soft crumb.

  • 2 cups (250g) all-purpose flour
  • 2 cups (400g) granulated sugar
  • 3/4 cup (75g) unsweetened cocoa powder
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup (240ml) buttermilk
  • 1/2 cup (120ml) vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup (240ml) hot water

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. Add eggs, buttermilk, oil, and vanilla to the dry ingredients. Mix until well combined.
  4. Gradually add hot water to the batter, mixing until smooth. The batter will be thin.
  5. Divide batter evenly between the prepared pans.
  6. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool in pans for 10 minutes, then invert onto wire racks to cool completely.

Notes

For extra moisture, substitute hot coffee for hot water. This cake pairs well with chocolate buttercream frosting. Store in an airtight container at room temperature for up to 5 days.
