Deliciously soft peanut butter cookies sandwiched with a creamy peanut butter filling.

For the Crust:
- 1 cup creamy peanut butter
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup powdered sugar
- 2 tablespoons unsalted butter, softened
- 2 tablespoons milk
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix 1 cup peanut butter, granulated sugar, egg, vanilla extract, baking soda, and salt until well combined.
- Roll dough into 1-inch balls and place on the baking sheet. Flatten slightly with a fork in a crisscross pattern.
- Bake for 10-12 minutes until edges are lightly golden. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack.
- For the filling, beat together powdered sugar, softened butter, 2 tablespoons peanut butter, and milk until smooth.
- Spread filling on the flat side of half the cookies and top with remaining cookies to form sandwiches.
