For the Crust:
1 cup creamy peanut butter
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1/2 cup unsalted butter, softened
1/2 cup brown sugar
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup powdered sugar
2 tablespoons milk
Instructions
1. Prepare the Crust:
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, cream together peanut butter, butter, granulated sugar, and brown sugar until smooth. Beat in the egg and vanilla.
In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the peanut butter mixture, mixing until combined.
Roll dough into 1-inch balls and place on prepared baking sheets. Flatten slightly with a fork in a crisscross pattern.
Bake for 10-12 minutes or until edges are lightly golden. Let cool on baking sheets for 5 minutes, then transfer to wire racks.
For the filling, mix 1/2 cup peanut butter, powdered sugar, and milk until smooth. Spread filling on the flat side of half the cookies and top with remaining cookies.
