Deliciously soft peanut butter cookies sandwiched with a creamy peanut butter filling.

For the Crust:
- 1 cup creamy peanut butter
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup powdered sugar
- 2 tablespoons milk
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together peanut butter, butter, granulated sugar, and brown sugar until smooth. Beat in the egg and vanilla.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the peanut butter mixture, mixing until combined.
- Roll dough into 1-inch balls and place on prepared baking sheets. Flatten slightly with a fork in a crisscross pattern.
- Bake for 10-12 minutes or until edges are lightly golden. Let cool on baking sheets for 5 minutes, then transfer to wire racks.
- For the filling, mix 1/2 cup peanut butter, powdered sugar, and milk until smooth. Spread filling on the flat side of half the cookies and top with remaining cookies.
