Peanut Butter Banana Chocolate Chip Cookies

  • 1/2 cup unsalted butter, softened
  • 1/2 cup white sugar
  • 1/2 cup light brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup ripe mashed bananas (about 2 medium bananas)
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the peanut butter, softened butter, white sugar, and brown sugar until smooth and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. Mix in the mashed bananas.
  5. In a separate bowl, whisk together the flour, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Fold in the chocolate chips.
  8. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing about 2 inches apart.
  9. Bake for 10-12 minutes or until edges are lightly golden.
  10. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Use ripe bananas for natural sweetness and moisture. Avoid using runny natural peanut butter as it can cause the cookies to fall apart. These cookies have a soft center and slightly crispy edges, perfect for a chewy texture.
