Over the Top Beef Chili

A rich, smoky chili made by smoking a large patty of seasoned ground beef and Italian sausage over a pot of chili, allowing the drippings to infuse deep flavor into a hearty tomato-based chili sauce.

  • 2 pounds ground chuck (80/20)
  • 1 pound hot Italian sausage meat
  • 1 large onion, diced
  • 1 red bell pepper, diced
  • 3 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 tablespoon cumin powder
  • 1 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons tomato paste
  • 1 (15 oz) can tomato sauce
  • 1 (28 oz) can diced tomatoes with green chili
  • 1 cup chicken stock (or beef broth)
  • 4 cloves garlic, minced
  • Optional: 1 can beer (e.g., Miller Lite)

Instructions

  1. Preheat grill or smoker to 300ยฐF using indirect heat.
  2. In a Dutch oven, heat olive oil and sautรฉ diced onion and red bell pepper until softened.
  3. Add garlic, chili powder, cumin, cayenne, salt, pepper, and tomato paste. Stir and cook for a minute.
  4. Add tomato sauce, diced tomatoes with green chili, and chicken stock. Stir together to form the chili base.
  5. Mix ground chuck and Italian sausage with chili powder, cumin, cayenne, and salt. Form mixture into one large flat patty.
  6. Place the Dutch oven on the grill over indirect heat. Position the meat patty on a wire rack above the Dutch oven so the drippings fall into the chili.
  7. Smoke at 300ยฐF for about 2 hours, until the meat reaches an internal temperature of 145ยฐF.
  8. Remove the meat patty from the rack, crumble it into the chili, stir to combine.
  9. Increase grill temperature to 325ยฐF and cook the combined chili with crumbled meat for another 1 to 1.5 hours to let flavors meld.
  10. Adjust seasonings to taste. Serve hot with desired toppings.
