One Pot Macaroni Cheeseburger Soup

A creamy, comforting soup that combines the flavors of a classic cheeseburger with macaroni in one easy pot. Perfect for a quick weeknight dinner and loved by kids and adults alike.

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 3 cups beef broth
  • 2 cups milk
  • 1 cup uncooked elbow macaroni
  • 1 cup shredded cheddar cheese
  • 1 tablespoon white balsamic vinegar
  • Salt and pepper to taste
  • Optional: Dill pickles, ketchup, or mustard for serving

Instructions

  1. In a large pot, cook ground beef and onion over medium heat until beef is browned and onion is soft. Drain excess fat.
  2. Add garlic and cook for 1 minute more.
  3. Stir in beef broth, milk, and uncooked macaroni. Bring to a boil, then reduce heat and simmer for 10-12 minutes, or until macaroni is tender.
  4. Stir in shredded cheddar cheese until melted and soup is creamy.
  5. Add white balsamic vinegar, salt, and pepper to taste.
  6. Serve hot, with optional toppings like pickles, ketchup, or mustard.

Notes

For a thicker soup, reduce the amount of broth. For a lighter version, use ground turkey instead of beef. This soup reheats well and tastes even better the next day.
