One Pot Lasagna Soup

A comforting and hearty soup that captures all the flavors of classic lasagna in a quick and easy one-pot meal.

  • 1 tablespoon olive oil
  • ½ yellow onion, diced
  • 1 pound Italian sausage
  • 1 pound ground beef
  • 1 teaspoon Italian seasoning
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 tablespoon minced garlic
  • 24 ounces pasta sauce
  • 5 cups chicken broth
  • ½ cup heavy whipping cream
  • 10 lasagna sheets, broken into pieces
  • 1 cup Italian blend cheese

Instructions

  1. In a large pot over medium heat, add the olive oil and onions. Allow onions to cook down for 5-7 minutes.
  2. Add the Italian sausage and ground beef to the pot and cook until no pink is visible within the meat.
  3. Season the meat with Italian seasoning, onion powder, and garlic powder. Add minced garlic and stir to combine. Allow garlic to cook for 30-45 seconds until fragrant. Drain off any excess grease.
  4. Add pasta sauce, chicken broth, and heavy whipping cream to the pot and stir to combine. Reduce heat to low and bring soup to a boil.
  5. Add in lasagna sheet pieces. Boil the lasagna sheet pieces until tender (3-7 minutes).
  6. Add cheese and stir to combine. Serve and enjoy!

Notes

For a lighter version, substitute ground turkey for beef. Add fresh basil or parsley for extra flavor. Let soup sit for 5 minutes before serving to allow flavors to meld.
