A comforting, creamy chicken pot pie made with pillowy gnocchi, all cooked in one pot for easy cleanup.

- 1 lb boneless, skinless chicken breast, cubed
- 1 package (16 oz) potato gnocchi
- 2 cups mixed vegetables (peas, carrots, corn)
- 1 small onion, diced
- 2 cloves garlic, minced
- 3 cups chicken broth
- 1 cup heavy cream
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- In a large pot, melt butter over medium heat. Add onion and garlic, sauté until fragrant.
- Add chicken cubes and cook until no longer pink. Sprinkle flour over chicken and stir to coat.
- Pour in chicken broth and heavy cream, stirring until smooth. Add mixed vegetables, thyme, salt, and pepper.
- Bring to a simmer, then stir in gnocchi. Cook for 10-12 minutes, until gnocchi is tender and sauce has thickened.
- Let stand for 5 minutes before serving. Garnish with fresh parsley if desired.
