One Pot Gnocchi Chicken Pot Pie

Description

A comforting, creamy chicken pot pie made with pillowy gnocchi, all cooked in one pot for easy cleanup.


Ingredients

  • 1 lb boneless, skinless chicken breast, cubed
  • 1 package (16 oz) potato gnocchi
  • 2 cups mixed vegetables (peas, carrots, corn)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt butter over medium heat. Add onion and garlic, sauté until fragrant.
  2. Add chicken cubes and cook until no longer pink. Sprinkle flour over chicken and stir to coat.
  3. Pour in chicken broth and heavy cream, stirring until smooth. Add mixed vegetables, thyme, salt, and pepper.
  4. Bring to a simmer, then stir in gnocchi. Cook for 10-12 minutes, until gnocchi is tender and sauce has thickened.
  5. Let stand for 5 minutes before serving. Garnish with fresh parsley if desired.
