For the Crust:

  • 2 cups rolled oats
  • 1 cup grated carrots
  • 1/2 cup almond flour
  • 1/4 cup maple syrup
  • 2 eggs
  • 1/4 cup melted butter
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and grease a pie dish.
  2. In a large bowl, mix oats, grated carrots, almond flour, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together maple syrup, eggs, and melted butter.
  4. Combine wet and dry ingredients, then pour into the prepared pie dish.
  5. Bake for 30 minutes or until the top is golden and set.
  6. Let cool slightly before serving.

Notes

You can customize the seasonings to taste.
