For the Crust:
1 cup water
1/2 cup unsalted butter
1 cup all-purpose flour
4 large eggs
1/4 teaspoon salt
1 tablespoon sugar
Powdered sugar for dusting
Instructions
1. Prepare the Crust:
Preheat oven to 375°F (190°C). Grease a muffin tin or line with paper liners.
In a medium saucepan, bring water and butter to a boil over medium heat.
Reduce heat to low and add flour, salt, and sugar all at once. Stir vigorously until the mixture forms a ball and pulls away from the sides of the pan.
Remove from heat and let cool slightly. Add eggs one at a time, beating well after each addition until the dough is smooth and glossy.
Spoon the dough into the prepared muffin tin, filling each cup about 3/4 full.
Bake for 25-30 minutes or until puffed and golden brown. Do not open the oven door during baking.
Remove from oven and let cool slightly. Dust with powdered sugar before serving.
