No-Bake Strawberry Cheesecake Bars

Creamy no-bake cheesecake bars with a graham cracker crust and fresh strawberry topping.

For the Crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • 2 cups fresh strawberries, sliced
  • 1/4 cup strawberry jam

Instructions

1. Prepare the Crust:

  1. Mix graham cracker crumbs with melted butter and press firmly into a 9×9 inch pan. Chill for 15 minutes.
  2. Beat cream cheese, powdered sugar, and vanilla until smooth. In a separate bowl, whip heavy cream to stiff peaks, then fold into cream cheese mixture.
  3. Spread cheesecake filling over crust. Top with sliced strawberries and brush with strawberry jam. Refrigerate for at least 4 hours before serving.

Notes
