  • 1/3 cup honey
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract
  • 2 cups rolled oats
  • 1/4 cup mini chocolate chips (optional)

Instructions

1. Prepare the Crust:

  1. In a large bowl, mix peanut butter, honey, melted coconut oil, and vanilla extract until smooth.
  2. Stir in the rolled oats until fully combined. Fold in mini chocolate chips if using.
  3. Scoop the mixture into a lined muffin tin, pressing down firmly. Chill in the refrigerator for at least 30 minutes before serving.
