For the Crust:
2 cups shredded coconut
1 cup chopped pecans
1/2 cup unsalted butter
1/2 cup brown sugar
1/2 cup granulated sugar
1/4 cup milk
1 tsp vanilla extract
1/4 tsp salt
Instructions
1. Prepare the Crust:
In a large bowl, mix shredded coconut and chopped pecans. Set aside.
In a saucepan over medium heat, melt butter. Add brown sugar, granulated sugar, milk, vanilla, and salt. Stir constantly until mixture comes to a boil.
Boil for 2 minutes, then remove from heat. Pour hot mixture over coconut and pecans. Stir quickly to combine.
Drop tablespoon-sized portions onto parchment paper. Let cool completely until firm.
