Mozzarella Ranch Chicken Bombs

Delicious cheesy chicken bombs stuffed with mozzarella and seasoned with ranch for a flavorful, easy-to-make dinner.

  • 1 lb boneless skinless chicken breasts
  • 1 cup shredded mozzarella cheese
  • 1 packet ranch seasoning mix
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice each chicken breast horizontally to create a pocket without cutting all the way through.
  3. In a bowl, mix mozzarella cheese, cream cheese, ranch seasoning, Parmesan cheese, garlic powder, and onion powder until well combined.
  4. Stuff each chicken pocket with the cheese mixture, then secure with toothpicks if needed.
  5. Heat olive oil in a skillet over medium heat and sear the stuffed chicken breasts for 2-3 minutes on each side until golden.
  6. Transfer the seared chicken breasts to a baking dish and bake in the oven for 20-25 minutes or until chicken is cooked through and cheese is melted.
  7. Remove toothpicks before serving.

Notes

Use fresh mozzarella for a creamier texture. For added crunch, coat chicken in breadcrumbs before searing. Serve with a side salad or steamed vegetables.
