Mouthwatering Garlic Chicken & Broccoli Stir-Fry

A quick and flavorful stir-fry featuring tender chicken, crisp broccoli, and a savory garlic sauce, perfect for weeknight dinners.

  • 1 lb boneless skinless chicken breasts or thighs, cut into 1-inch pieces
  • 4 cups broccoli florets, cut into bite-sized pieces
  • 4 cloves garlic, minced
  • 1/4 cup low-sodium soy sauce or tamari
  • 1/4 cup low-sodium chicken broth
  • 3 tablespoons honey
  • 2 teaspoons cornstarch
  • 2 tablespoons vegetable oil or avocado oil, divided
  • 1 cup thinly sliced carrots
  • 1 small onion, diced
  • Salt and pepper to taste
  • 1 teaspoon grated ginger (optional)

Instructions

  1. Heat 1 tablespoon oil in a large skillet or wok over medium-high heat. Add broccoli and carrots; stir-fry for 4-5 minutes until tender-crisp. Remove vegetables from the pan and set aside.
  2. In the same pan, add remaining 1 tablespoon oil. Season chicken with salt and pepper, then add to the pan. Cook for 5-6 minutes until browned and cooked through. Remove chicken and set aside with vegetables.
  3. Lower heat to medium. Add minced garlic (and ginger if using) to the pan and stir for 30 seconds until fragrant. Meanwhile, whisk together soy sauce, chicken broth, honey, and cornstarch in a bowl until smooth.
  4. Return chicken and vegetables to the pan. Pour in the sauce and stir constantly for 2-3 minutes until the sauce thickens and coats everything evenly. Serve hot over rice.

Notes

For extra flavor, marinate the chicken in half the soy sauce and garlic for 15 minutes beforehand. Use tamari for gluten-free option. Adjust honey for desired sweetness.
