Quick Pasta and Chickpeas (Comfort in a Bowl)

A comforting and simple pasta dish featuring chickpeas, rosemary, garlic, and a finishing oil, perfect for a cozy meal.

Ingredients

  • 1/4 cup olive oil
  • 3 garlic cloves, minced
  • 1 teaspoon red pepper flakes
  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1 tablespoon tomato paste
  • 4 cups water or vegetable broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried rosemary or 1 tablespoon fresh rosemary, chopped
  • 6 ounces small pasta (such as ditalini or mini elbows)
  • Freshly grated Parmesan cheese, for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and red pepper flakes; sauté until fragrant, about 1 minute.
  3. Stir in chickpeas and tomato paste; cook for 2 minutes.
  4. Add water or vegetable broth, salt, pepper, and rosemary; bring to a boil.
  5. Add pasta and cook until al dente, stirring occasionally, about 8-10 minutes.
  6. Adjust seasoning to taste.
  7. Serve topped with freshly grated Parmesan cheese.

Notes

This dish is very versatile; you can add fresh spinach at the end to wilt or substitute vegetable broth for water for extra flavor. Leftovers taste great and the recipe can be doubled easily for more servings.
