Gingerbread Blondies

A quick and easy holiday treat combining the warm flavors of ginger and molasses in a blondie bar, topped with a unique snow sugar for a festive finish.

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/2 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 1/4 cup molasses
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • For Snow Sugar: 1/2 cup granulated sugar
  • 1 teaspoon cornstarch
  • 1 tablespoon coconut oil

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×9-inch baking pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, ginger, cinnamon, and cloves.
  3. In a large bowl, mix melted butter and brown sugar until combined. Add molasses, eggs, and vanilla extract; mix well.
  4. Gradually add dry ingredients to wet ingredients, stirring until just combined.
  5. Pour batter into prepared pan and spread evenly.
  6. Bake for 25 to 30 minutes or until a toothpick inserted in the center comes out clean.
  7. While baking, prepare snow sugar by mixing granulated sugar, cornstarch, and coconut oil until crumbly. Chill in refrigerator for 5 to 10 minutes.
  8. Once blondies are cooled, sift snow sugar over the top for a festive look.

Notes

The snow sugar topping adds a unique texture and appearance, mimicking snow. You can add a pinch of colored sugar or flavor extracts to customize the topping. Let blondies cool completely before adding the snow sugar to prevent melting.
