For the Crust:

  • 1 box chocolate cake mix
  • 1 (8 oz) package cream cheese, softened
  • 1/2 cup sugar
  • 1 egg
  • 1/2 tsp peppermint extract
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • 1/2 cup butter
  • 1 tsp vanilla extract
  • Green food coloring (optional)
  • 1 cup whipped cream for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Prepare chocolate cake mix according to package directions and pour into two greased 9-inch round pans.
  2. In a bowl, beat cream cheese, sugar, egg, and peppermint extract until smooth. Add green food coloring if desired.
  3. Drop spoonfuls of cheesecake mixture over the cake batter in pans. Swirl gently with a knife.
  4. Bake for 25-30 minutes until a toothpick comes out clean. Cool completely.
  5. For the fudge topping, heat chocolate chips, heavy cream, and butter in a saucepan until melted. Stir in vanilla.
  6. Pour warm fudge over cooled cakes. Refrigerate for 1 hour before serving. Garnish with whipped cream.
