No Bake Mint Chocolate Bars

These No Bake Mint Chocolate Bars feature a no-bake graham cracker crust topped with a creamy mint filling and a rich chocolate ganache, making them a perfect mint chocolate Christmas treat.

  • 1/2 cup butter (for base)
  • 1/3 cup cocoa powder
  • 1/4 cup sugar
  • 1 egg
  • 2 cups graham cracker crumbs
  • 3/4 cup shredded coconut
  • 1/4 cup butter (for filling)
  • 2 cups powdered icing sugar
  • 23 tablespoons milk
  • 1 teaspoon mint extract
  • green food coloring (to desired color)
  • 2/3 cup chocolate chips or chopped chocolate (for ganache)
  • 2 tablespoons butter (for ganache)

Instructions

  1. Line an 8×8 inch pan with tin foil.
  2. In a large microwave-safe bowl, combine 1/2 cup butter, sugar, and cocoa powder and microwave on high for 45 seconds. Stir and microwave another 20-30 seconds until melted and combined.
  3. Let cool for 5 minutes, then quickly whisk in the egg. Stir in graham cracker crumbs and shredded coconut until fully combined.
  4. Press the mixture firmly into the prepared pan to form the base layer.
  5. For the filling, beat 1/4 cup butter until smooth using an electric mixer. Add powdered sugar and 2 tablespoons of milk and beat until smooth, adjusting milk or sugar for desired consistency.
  6. Add mint extract and green food coloring, then spread the mint filling evenly over the base layer.
  7. For the ganache, melt chocolate chips and 2 tablespoons butter in 20 second intervals in the microwave, stirring until smooth.
  8. Pour the ganache over the mint filling and spread evenly.
  9. Refrigerate for at least 2-3 hours until completely set before slicing and serving.

Notes

1. Adjust green food coloring according to desired shade. 2. Store bars in the refrigerator or freezer for longer freshness. 3. Be sure to cool the chocolate mixture before adding the egg to avoid scrambling.
