Festive, melt-in-your-mouth cookies with a refreshing mint flavor and rich chocolate chips, rolled in powdered sugar for a snowy appearance.

For the Crust:

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon peppermint extract
  • 2 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 3/4 cup mini semi-sweet chocolate chips
  • Additional powdered sugar for rolling

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together butter and 1/2 cup powdered sugar until light and fluffy. Mix in peppermint extract.
  3. Gradually add flour and salt, mixing until just combined. Fold in chocolate chips.
  4. Shape dough into 1-inch balls and place 2 inches apart on prepared baking sheets.
  5. Bake for 10-12 minutes or until bottoms are lightly golden. Cool on baking sheet for 5 minutes, then roll warm cookies in powdered sugar. Cool completely and roll again in powdered sugar before serving.

Notes

You can customize the seasonings to taste.
