Mint Chocolate Chip Snowball Cookies

Soft, buttery snowball cookies infused with mint extract and mini chocolate chips, rolled in powdered sugar to resemble snowballs.

  • 1 cup unsalted butter, softened
  • 2/3 cup powdered sugar, sifted
  • 2 1/4 cups all-purpose flour, spooned and leveled
  • 1/2 teaspoon salt
  • 1 teaspoon mint extract or peppermint extract
  • green gel food coloring (optional)
  • 3/4 cup mini chocolate chips
  • additional powdered sugar for coating

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, beat the softened butter and powdered sugar together until creamy.
  3. Add the flour, salt, and mint extract; mix just until combined.
  4. Mix in green gel food coloring if desired until the dough is evenly colored.
  5. Fold in the mini chocolate chips.
  6. Cover the dough and refrigerate for at least 30 minutes to firm up.
  7. Scoop out one tablespoon of dough at a time and shape into balls.
  8. Place dough balls on a prepared baking sheet lined with parchment paper.
  9. Bake for 7 to 8 minutes, just until bottoms are very lightly browned.
  10. Cool cookies on the baking sheet for 5 minutes, then roll them in powdered sugar while still warm.
  11. Once cooled, roll cookies again in powdered sugar to completely coat them.

Notes

For best texture, do not overbake — cookies should not brown much. Use gel food coloring for vibrant color without thinning dough. Refrigerating dough improves shape and handling.
