Melted Mozzarella & Ranch Chicken Bombs

These savory chicken bombs are stuffed with bold ranch flavor and smothered in melty mozzarella cheese. A perfect weeknight meal or party appetizer that’s both delicious and easy to make.

  • 1 lb boneless, skinless chicken breasts
  • 1 cup shredded mozzarella cheese
  • 1 packet ranch seasoning mix
  • 1/2 cup cream cheese, softened
  • 1/2 cup bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 2 large eggs, beaten
  • Cooking spray or oil for baking

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly coat with cooking spray.
  2. Slice each chicken breast horizontally to create a pocket, being careful not to cut all the way through.
  3. In a bowl, mix mozzarella cheese, cream cheese, ranch seasoning, garlic powder, onion powder, and black pepper. Stuff each chicken pocket with the cheese mixture.
  4. Close the chicken pockets and secure with toothpicks if needed. Dredge each stuffed chicken breast in beaten eggs, then coat with a mixture of bread crumbs and Parmesan cheese.
  5. Place the chicken bombs on the prepared baking sheet. Lightly spray the tops with cooking spray or brush with oil.
  6. Bake for 25-30 minutes, or until the chicken is cooked through and the coating is golden brown. Let rest for 5 minutes before serving.

Notes

For extra flavor, add a sprinkle of Italian seasoning to the breadcrumb mixture. These chicken bombs can be served with extra ranch dressing for dipping. Make sure to remove toothpicks before serving.
