Melted Mozzarella Ranch Chicken Bombs

Savory chicken bombs stuffed with bold ranch flavor and smothered in melty mozzarella cheese, perfect for a weeknight meal or party appetizer.

  • 1 lb boneless, skinless chicken breasts
  • 1 cup shredded mozzarella cheese
  • 1 packet ranch seasoning mix
  • 1/2 cup cream cheese, softened
  • 1/2 cup grated Parmesan cheese
  • 1 cup bread crumbs
  • 1 egg
  • Salt and pepper to taste
  • Olive oil or cooking spray for baking

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix cream cheese, ranch seasoning, mozzarella cheese, and Parmesan cheese until well combined.
  3. Cut chicken breasts into thin, flat pieces or butterfly them to create pockets.
  4. Place a spoonful of the cheese mixture onto each chicken piece and roll or fold to enclose the filling.
  5. Secure with toothpicks if needed.
  6. Beat the egg in a shallow bowl. Dip each chicken roll in the egg, then coat with bread crumbs.
  7. Place the coated chicken bombs on a greased baking sheet.
  8. Bake for 25-30 minutes or until chicken is cooked through and coating is golden brown.
  9. Remove toothpicks before serving.

Notes

For extra crispiness, broil the chicken bombs for 1-2 minutes at the end of baking. Serve with a side salad or dipping sauce for a complete meal.
